With the side walls in upright position, it can accommodate a maximum cooking width of 8.75 inches and can be adjusted in 1 inch increments downward. It also has a maximum cooking length of 16 inches. In addition to its use as a caddy, it can also be inverted for different cooking methods, such as catching grease and drippings, separating food from hot spots on the grill, or raising the meat for hotter air circulation by 3 inches.
Holes in the steel allow exposure to smoke and heat.
Tall side walls keep the brisket from getting crumbly by forcing air flow above it, while allowing the proper amount through the holes to cook.
